What to do with frozen cherry tomatos?

Post by mutepointe »

My Dad gave me a few quart zip lock bags of frozen cherry tomatoes. I know I just can't thaw them out and use them in salads. I have to turn them into a soup or stew. I don't want to peel the tomatos, that would take forever. Any suggestions?

You can probably peel them in seconds by dipping them, still frozen, into boiling water for a few seconds. It should loosen the skins to the point that you can just slip them off by squeezing gently with your finger.
And now there was no doubt that the trees were really moving - moving in and out through one another as if in a complicated country dance. ('And I suppose,' thought Lucy, 'when trees dance, it must be a very, very country dance indeed.')

You could throw them at your enemies windows to break them and then the tomato would thaw out and nobody would know how it happened and you could LAUGH

It is here, too, when its said at all. Preserving produce is a bit of a dying art.

Cherry tomatos don't have enough weight for throwing accurately or for distance. To do that, you need a bushel of great big beefstake tomatos. Slightly overripe, if possible.

Ya don't need to go to the effort of blanching them. Some warm water will slip the skins just as well. Then put them in a blender and make: Gazpacho Andaluz

4 large tomatoes sliced and diced fine
1-2 large tomatoes blended
3 cloves garlic chopped and blended with the tomato
1 large Vidalia onion sliced and chopped
2 sweet bell peppers, green, red, yellow, or orange sliced and chopped
1 large English cucumber or 3 small Kirbys chopped, peel the Kirbys
3 small cans of V-8 juice
11/2 teaspoons Italian Seasoning
11/2 teaspoons white pepper
11/2 teaspoons celery salt
1 Tablespoon basil (dried)
3 Tablespoons fresh finely chopped parsley
2-3 Tablespoons prepared horseradish
3 Tablespoons red wine vinegar
11/2 teaspoons sugar
optional: 2 Tablespoons Clam juice

Blend tomatoes and garlic until smooth adding some onions, peppers and cucumbers if desired. Mix in with all other ingredients and chill for 12 hrs.

A frozen cherry tomato shot from a good quality sling shot could easily take out a rabbit, don't ask how I know this.

Salsa. If you are fan of salsa, that is. I stopped buying store-brand salsa mixes ages ago. I grow my own tomatoes and peppers, add some onions, a habanero (which I don't grow yet) and other things and voila...a healthy snack food substance.

You're thinking of ice cubes. When a tomato thaws out you're still left with a mushy tomato and a broken window.

That's it - freeze them into ice cubes. They would look real pretty in a drink
